WHY I LIKE IT: Pitmaster Mark Scott, former Executive Chef of Maiya’s, a critically acclaimed fine-dining restaurant in Marfa, infuses inventive and adventurous techniques throughout his menu and it’s a hit. According to Texas Monthly BBQ Editor Daniel Vaughn, “a few barbecue pits have come and gone from Marfa, and now it seems they may finally have one that will stick around for a while in Convenience West.” Cheers to that.
